TJI Pioneers Upcycling of Surplus Pork Belly into Lifestyle Products

Tam Jai International is proud to become the pioneering restaurant group in Hong Kong to take forth an upcycling initiative using surplus pork belly — an innovative milestone in sustainable F&B operations. This flagship project exemplifies our commitment to circular economy principles by creatively transforming surplus pork belly from our central kitchen into an array of lifestyle products, including handmade soaps, lip balms, and scented candles.

Partnering with the academic and social sectors, students from the Institute of Vocational Education participated in our product research and development, students from the Hong Kong Design Institute contributed to advertising creative and packaging designs, while people on the journey of mental health recovery from New Life Psychiatric Rehabilitation Association were occupationally trained to take part in the mass production.

This cross-sectoral and interdisciplinary project extends Tam Jai International’s innovative spirit to encompass our ESG principles, nurturing young talents for green innovation, fostering community care and infusing society with positivity.

Food Waste Management

Prevent, Reuse and Recycle Food Waste
We incentivise “Less Mixian” and “Light Mixian” orders to promote mindful consumption and prevent food waste at source. By launching pilot food waste recycling programs with landlords in Hong Kong, we aim to reduce landfill waste. We are actively exploring opportunities to expand these initiatives to private shopping malls, further reducing solid waste and promoting recyclability. In collaboration with Food Angel, Foodlink Foundation, and Feeding Hong Kong, we regularly donate surplus pork belly from our Central Kitchen to be transformed into meal boxes for those in need.

Plastic-free Initiatives

Eliminating Single-use Plastics
We are committed to sustainable practices across our operations. After introducing eco-friendly cutlery for takeaway customers, we have taken further action in line with the Hong Kong government’s 2025 zero-plastic packaging initiative. Beginning April 2025, all TamJai and SamGor restaurants transitioned from plastic takeaway mixian bowls to paper alternatives, marking a significant step in reducing plastic waste. These efforts underscore our dedication to responsible sourcing, environmental protection, and supporting a greener community future.

Green Procurement And Sustainable Sourcing

Protect Biodiversity
We prioritise local sourcing to support local businesses and reduce the environmental impact associated with transportation, commonly known as “food mileage”. We also focus on sourcing sustainable seafood to protect marine biodiversity and promote responsible fishing practices. Our restaurants have introduced series of fish-related menu featuring items such as SamGor’s fish bean curd, TamJai’s crisp grass carp and fish soup base. These offerings are made using WWF-certified sustainable fish products, ensuring that they align with our commitment to sustainability and marine conservation.

Waste Audit

To Develop Targeted Strategies for Waste Reduction

Following our initial waste audit at our Hong Kong restaurants, we expanded the scope in FY2024/25 to include our central kitchen, providing a more comprehensive view of the Group’s overall waste generation. In addition to identifying the top five waste components in our restaurants and central kitchen, we delved deeper to ascertain the top five sources of food waste during our operations, allowing us to develop targeted strategies to address these specific areas.
